Mun Ebony Nakiri
A Japanese-style Nakiri kitchen knife, made from AEBL stainless steel with a Mun Ebony and nickel silver handle. This knife was made as part of a collaboration project with Hyphen Cutlery (@hyphencutlery).
Designed for chopping vegetables but suitable for many kitchen tasks, the blade has a symmetrical grind (same grind on both sides of the blade), and a slight convex profile, allowing for better food release.
Blade: 210mm AEBL stainless steel, RHC 62
Handle: stabilised Mun Ebony, nickel silver spacer.
